Bay of Fires Sloop Rock Gold - Semi Hard
PRODUCER: Bay of Fires : Cheese Maker Ian Fowler
ORIGIN: St Helens, Tasmania
STYLE: Semi Hard
Not too many cheesemakers can claim a family history of over 400 years of continuous cheese making. Ian Fowler can - his brother still produces cheese on their family farm in Stratford-On-Avon, England, to this day. Ian, a 14th generation cheesemaker, moved to picturesque St Helens in Tasmania over ten years ago.
Today he crafts just two cheeses in true farmhouse style from his small herd of around 20 cows that feed solely on the lush pastures surrounding his tiny dairy.
Curd washing, brine salting and daily rubbing for two weeks are just some of the traditional methods used, with a minimum ripening period of 3 months. As the cheese matures it develops a dappled, saffron-colored rind with a particularly grassy aroma.
Mild, clean, and balanced in flavor Sloop Rock Gold reflects the unique combination of exceptional milk quality and skilled artesian cheese making.
